Winter is a wonderful time to cozy up to a moist and comforting mocha cake. This is an adaptation from the Moosewood cookbook. Lhamo and I served it at Thanksgiving with rave reviews.

Many of you know I'm currently writing my second cookbook: FOODHISATTVA, COOKING ON THE PATH. It will be a compilation of my cooking experiences in the lovely kitchen at Vajra Vidya Retreat Center last summer. Used organic and local ingredients for the best flavor. In the meantime, make this tasty VEGAN treat and invite some neighbors for tea!

Vegan Mocha Cake with Glaze
makes one 9 inch round cake or 8 4 inch tartlet cakes

Preheat oven to 375 (350 for sea level)
Prepare your pans with butter and flour or oil and flour

1.5 cups flour
1/3 cup cocoa powder
1 tsp baking soda
1/2 teaspoon sea salt
1 cup sugar

Sift those ingredients in a medium bowl

1 cup cold or room temp coffee
1/2 cup sunflower oil
2 tsp vanilla

Whisk the wet ingredients in a small bowl then add to the dry ingredients
With a rubber spatula GENTLY fold the dry and wet together; don't overmix
Then when finished add

2 Tablespoons balsamic vinegar
Mix well but gently with a folding motion
Pour into prepared pans and bake for about 25 minutes (less for smaller cakes)
Toothpick inserted will come out clean and cake will pull away from sides

1/2 pound good quality dark chocolate chopped fine
3/4 cup hot coffee

Pour hot coffee over chocolate in a small bowl
Let sit 4 minutes
Gently stir until combined and glossy
Let sit until cakes cool, glaze will thicken

Glaze cooled cakes

Imagine getting up from where you are sitting to get a cup of tea. Turn around and look back to your seat – a HUGE male monkey is sitting there, dead-pan expression, eating your rice mandala offering while sitting bare butt on your meditation cushion. EEK. Trapped in the teeny galley kitchen, your primal fear response triggered, heart beating rapidly, your brain quickly scans escape plans and ways to protect yourself. But then the higher brain clicks in, Oh I want to protect my mandala. He is eating my holy rice! I start throwing kitchen items at him. He doesn’t care. He just stares right at me, stuffing his face with organic brown basmati and brightly colored pulses. I don’t want to hurt him. But I desperately want him to leave out the open balcony door and back into the concrete jungle he used to call home. Finally out of the corner of my eye I spot my running shoes. Alas, Adidas to the rescue! With a loud shout and a carefully hurled pink and orange size 8 trainer, he slowly lumbers out the door. Well-fed and now karmically connected to the the Path.

Daily life is full of animals here. It is one of the small joys of India. Cows and monkeys and dogs and goats. There are three small ponies who walk themselves to somewhere every day and then back again. Are they going to work? The neighbor puts out a small bucket of water for them. Sometimes I feed them carrot peels. There is the huge ox with a gray coat and big bright blue eyes. He is one of my favorites. Always a surprise to see blue eyes!

Yesterday on the bus I saw a sign: Shiva Shakti Dog Farm & Driving School. With a well-groomed german shepherd on the side. I don’t know why but it made me laugh all day upon reflection. I sort of want to go there, play with the pups and have a short defensive driving lesson if there’s time. My other favorite sign is at the temple above the shoe rack where you are required to leave your shoes before entering the shrine room. It says “Make sure your shoes are not stolen by someone”. So true.

India Updates

November 12,2011

Early morning at Deer Park Institute. Have come to see Jetsunma Tenzin Palmo teach on the four noble truths. How could one ever get enough of the Buddha’s first teaching? And so precious to receive from a female, western monastic, a pioneer of the path, an accomplished practitioner, and a philanthropist in her own right.

I have come not only for the teaching but to ask her a few questions about my next steps. I need to receive the next set of vows and usually they come in a group. How to find? We also share a common lineage and I will ask her about that and any advice she has for me in terms of practice, dress, and seeking patronage.

Deer Park is a sweet place set in the cute town of Bir. It is partially a Tibetan settlement with the requisite noodle cafes, shawl shops, and of course monasteries. We went to sleep under the full moon with the sound of pujas happening all around. Nice. Oh yes, and of course the resounding echos of the dogs barking at each other.

So much has happened in the short month that I’ve been in India.

THOSAMLING NUNNERY: what a gorgeous place! Set amid golden rice fields in a secluded place without any vehicle roads. One walks there on a narrow path through a rural village. I came to have a favorite baby goat – tethered to a post and a sign that I had taken the correct route. Baaaaaaaaaa! The nunnery is a mixture of nuns from different countries, lay women on retreat, Indian staff, and a learned Geshe.

It was wonderful to be with other monastics however I have since moved out to a place with my own kitchen as my health continues to be an issue and with many food allergies I need to cook for myself. Alas!

In any case, I made some connections with the people there and am sure to continue friendships. I miss the gardens, the quiet, and the morning prayers with all the nuns chanting in the dimly lit temple as the sun rises over the Himalayan foothills. Yet my skin and stomach are happier with my own food. And the move is a good solution.

MCLEOD GANJ: so I have moved into my “old” room in the dirty, noisy, ramshackle town of Mcleod Ganj, or upper Dharamsala. The town I love and hate all at once. Why do I feel so at home there? There is a new house being built above me and I feel as if I’m in the Bardo of Construction. In fact noise seems to trigger me more and more these days. I just want to be alone in silence and practice. This is a rare occasion. I find myself drifting into fantasies of the quiet of Todos Santos last year or the sublime shrine room of the straw bale Hollander abode in Crestone.

Silence must certainly be one of the ultimate precious treasures on the planet. Priceless and hard to find! It is of course best if one can transcend the irritations of sensory phenomena, however I am not there yet and could use some strengthening of mind without constant irritation. So a solitary retreat is on my aspiration list.

I digress…the move to Mcleod has given me the gift of time with Lhamo at the café. We have put two new items on the menu – brown rice and veggies in a peanut ginger sauce and fresh roasted tomato sauce over penne with pan seared veggies. Yum.

This is my daily schedule:

4:45 wake-up, coffee, study

5:45 practice session one

7:30 yoga or kora around temple

8:30 cappuccino and toast at Lhamo’s

10:00 practice session two

12-3 lunch break

3:30 practice session three

5:30 help at café or early dinner

7:30 transcribe Rinpoche’s dharma talks or study

8:30 bed

It is a good schedule that keeps me focused and allows for time with friends. Usually the whole staff at Lhamo’s plus me eat lunch together. Sometimes I cook, sometimes Lhamo, sometimes one of the waiters. When we can all sit down together it is really nice.

India is India. For those of you who have been here you know what I mean. It provides so many opportunities to turn the mind towards being patient, kind, generous, and tolerant. Many things don’t work – I bought a strand of lights, only half the bulbs worked. I bought a stainless steel container, the lid doesn’t fit. The ATM is broken when you need money. The shop is out of the ingredient you need for weeks. And then can I just let go, let go, let go, go with the flow? Somehow I do a better job of it here than in the states. Probably because my expectations are different.

One thing I had forgotten is when the shop owners don’t have small change for your bill, you get a mixture of money, cough drops, and matches! That is so funny, no?

Despite the challenging parts of being here, there are the lovely parts…walking down the street amid Tibetan monastics, Indian Sadhus, Kashmiri shop owners, Sikh businessmen, Hindu families, and international travelers. The colors and outfits and languages give the feeling of a daily festival. Waking up to the snow-capped Himalaya. Snuggling in to a jam-packed temple for the Dalai Lama’s teachings.

After all these years I feel quite at home in McLeod. There are lots of familiar faces and places. And yet my mind still goes bonkers almost daily about “where is the next place for me? Where is a place I might stay for a while?” so I am searching for home in my psyche. Which is a total waste of time. Will home for me be an internal feeling? Or will it be an outward location? Or am I truly a wanderer? Maybe all and neither. In any case, the future will present itself as the present when the time comes! Isn’t it silly how much time we spend creating a future that never arrives. Let go, let go, let go…

Rabjung Vows

Sitting outside the Great Stupa in Kathmandu.
Through the kindness of my teachers and the lineage masters,
I received Rabjung vows yesterday at the White Gompa.
My new name is Thupten Tsondru Palden.
My new clothes are blessed robes.
My new job is turning the mind towards enlightenment
for the benefit of all beings.

May I fulfill the aspirations of the vows and realize
the union of emptiness and compassion.
May all beings be happy!

Now, off to India and Thosamling Nunnery.

Alms Adventure Roadtrip

Join me in raising funds for my eastward journey to take vows and become a nun in the Tibetan Buddhist tradition. The aspiration to train in the bodhisattva path and turn my mind towards enlightenment becomes my full-time "job" March 2011.

In order to support myself as a nun, I am raising alms money to get to/from Nepal and cover basic living expenses for the next year.
